The term London Broil has become associated with the shape of the cut rather than the section from which it is produced. As a result, one can find different levels of meat quality - all being called "London Broil". We only use the better, more tender cuts for our products. This particular London Broil is cut from the Calachel - a tender cut which is ideally sliced diagonally down, across the grain. This also happens to be our original London Broil with which most of our customers are familiar.
