Chinese Chicken Pineapple

Great for Whole Fryer Cut-Ups

Ingredients:

2 Cut-Up Fryers, each approx. 3.5 lbs. or the equivalent of 7 lbs. of Chicken Pieces
Spray "Spray 'n Cook" on roasting pan - preferably Olive Oil flavor
1 Tablespoon Extra Virgin Olive Oil
2 Onions
1 Green Pepper
1 punnet sliced mushrooms
2 Tablespoons Corn Flour (Mazena)
Sale and Pepper to taste
1 can Pineapple Chunks, drained - but save the juice for later!
1 cucumber
Optional: - 1 to 2 teaspoons sugar
Optional: - 100 grams roasted Cashews

Method:

Preheat oven or grill to 375 degrees Fahrenheit
Spray a baking dish that is deep enough to hold a the Chicken Pieces (and sauce) with "Spray 'n Cook"
Rinse off the Chicken Pieces with cold water and then dry them with paper towel
Place Chicken Pieces in baking dish
Place baking dish in Oven or grill for approx. 1/2 an hour to let fat melt into dish
Remove baking dish from oven and carefully (without burning yourself), pour off any excess fat or juice that has collected in the pan. (Best to pour this into an empty container that you can trash rather than down the sink drain.

During this first 1/2 hour while the chicken is in the oven:
Slice Onions in thin disks. Heat some oil in a pan and fry onions until brown
Dice the Green Pepper and as the Onions are browning, add Pepper to the Onions. Allow to cook for approximately 5 minutes.
Add Mushrooms and allow to cook until they are soft.
Season with Salt and Pepper.
Mix the corn flour with 1/2 cup of cold water to form a thick paste. Once it is a smooth paste, add water to make up a full cup. Pour this mixture over the Onion and Mushroom mix and keep stirring until it thickens.
Add the Pineapple juice and keep stirring. If the mixture is too thick, add more water.
Finally, add the Pineapple chunks. Taste sauce and if necessary add 1 to 2 teaspoons of sugar.


Pour sauce over chicken and return to oven for 1/2 hour.
Peel and dice the cucumber.


Remove the baking pan from the oven and add to Chicken Pieces and mix in, turning the Chicken Pieces as you do so.
Return the baking dish to the oven for a further 20 minutes and allow the Chicken to "crisp" on the other side.
Remove from oven and throw over the toasted cashews to decorate.

Suggestion: Serve with steamed Rice and a fresh Garden Salad.
